How can I setup a CNAME record to redirect mail.mydomain.com to an INBOX?

Just off the top of my head:
1. Create the CNAME to an existing record (that has all the appropriate MX records, of course).
2. Add it as a new mail domain name in the control center in "forward all to mail box" mode.
3. Select a mail box to deliver to (or create a new one before step 2).

I think you misunderstand the question.
I want to go to "mail.mydomain.com" and be directed to a logon page (webmail). I can setup a forward, but changing the CNAME record for mydomain.com and *.mydomain.com is preferred.

OK, so if I understand correctly you want something to CNAME to that will go directly to one of our webmail login pages? Right now we just have the landing page at webmail.rollernet.us but the actual login pages are at:
https://webmail.rollernet.us/squirrelmail
https://webmail.rollernet.us/roundcube
So if I created squirrelmail.webmail.rollernet.us and roundcube.webmail.rollernet.us to go directly to their respective login pages, would that be what you're looking to do?

Not sure if this is the same thing, but for my users, I've set up webmail.domain.com as a cname for webmail.rollernet.us
If you're wanting it to go direct to roundcube or squirrelmail, just add the relevant /roundcube or /squirrelmail to the end of webmail.rollernet.us

Yes, you both have it correctly.
However, I cannot put https:// or even \roundcube in a CNAME field. Instead, I have to put only "webmail.rollernet.us", and this doesn't take me directly to an INBOX or logon screen.

I'll go ahead and create some DNS records you can CNAME to for each webmail flavor and post them here when they're ready.

I created the following DNS records for you to test as CNAME targets:
squirrelmail.webmail.rollernet.us
roundcube.webmail.rollernet.us
They (or more specifically, the IP address they resolve to) will redirect to the applicable webmail login page.
