Auto-filing into a folder

I was wondering whether there might be a feature I could use (or if I could use a filter or something) which would allow me to auto-file an incoming email into an IMAP folder.

For example, if I received an email addressed to Darren+mum@mydomain.com which could automatically be files into the folder “mum”.

Perhaps I could do that with sieve rules. Am I on the right track?
